Ingredients

  • salmon fillet180g
  • quinoa60g, uncooked
  • asparagus100g
  • lemon0.5
  • olive oil1 tbsp

Method

  1. Cook the quinoa according to packet instructions.
  2. Place the salmon and asparagus on a tray, drizzle with olive oil and season.
  3. Bake at 200°C for 12-15 minutes until the salmon is just cooked through.
  4. Serve over the quinoa with a squeeze of lemon.
