Ingredients

  • chicken sausages2
  • baked beans200g
  • chopped tomatoes200g
  • onion1, sliced
  • carrot1, sliced

Method

  1. Brown the sausages whole in a dry pan over a medium heat for 6 minutes, turning, then lift out and slice into 2cm rounds.
  2. Soften the onion and carrot in the same pan for 6-8 minutes until the onion is translucent and starting to colour.
  3. Return the sausages, add the chopped tomatoes, and simmer for 10 minutes to reduce and concentrate.
  4. Stir in the baked beans and warm through for 5 minutes. Do not boil hard once the beans are in or they break up.
  5. Season and check the sausages are cooked through before serving.
