Ingredients

  • lean beef mince120g
  • potato250g, diced
  • egg1
  • onion0.5, diced
  • olive oil1 tbsp

Method

  1. Dice the potato into 1.5cm cubes and parboil for 6 minutes, then drain well and leave to steam dry for 2 minutes. Dry potato is what crisps.
  2. Heat the oil in a wide frying pan over a medium-high heat and fry the potato for 8-10 minutes without stirring too often, until a crust forms.
  3. Push the potato to one side, add the onion and beef mince, and brown for 5 minutes, breaking the mince up as it cooks until no pink remains.
  4. Stir everything together, season well, and press flat. Leave for 2 minutes to catch on the base.
  5. Make a well in the middle, crack in the egg, cover the pan and cook for 3 minutes until the white is set.
Meal-prep note

The hash keeps for 3 days and reheats well in a hot pan. Cook the egg fresh each time — reheated egg turns rubbery.
