Ingredients

  • beef mince300g
  • pasta150g, uncooked
  • tomato passata400ml
  • cheddar cheese60g
  • olive oil1 tbsp

Method

  1. Preheat the oven to 200°C (180°C fan). Cook the pasta in salted boiling water for 2 minutes LESS than the packet says — it finishes cooking in the oven.
  2. While the pasta cooks, heat the oil in a large pan over medium-high heat. Brown the beef mince for 5-6 minutes, breaking it up as it cooks.
  3. Add the passata, season with salt, pepper and any herbs you like (oregano works well), and simmer for 10 minutes.
  4. Drain the pasta and stir it through the sauce until fully coated. Transfer everything to an ovenproof dish.
  5. Top with the grated cheddar and bake for 15 minutes until the cheese is melted, bubbling and golden in spots.
  6. Rest for 5 minutes before serving. Around 1550 kcal as a whole — it comfortably splits into two portions if that's over your target, and reheats well for 4 days.
