Bulking Peanut Butter Oats

Ingredients
- rolled oats120g
- plant milk300ml
- peanut butter3 tbsp
- banana1
- honey1 tbsp
- chia seeds1 tbsp
Method
- Combine the oats and plant milk in a saucepan over medium heat.
- Cook for 5-6 minutes, stirring regularly, until thick and creamy — add a splash more milk if it gets too stiff.
- Take off the heat and stir in the peanut butter until fully melted through.
- Transfer to a bowl and top with the sliced banana, a drizzle of honey and the chia seeds.
- For a no-cook version: mix everything cold in a jar the night before and refrigerate — it's ready by morning.
- This makes one very large portion (~1080 kcal). Halve everything for a standard breakfast.
