Ingredients

  • chicken breast150g
  • halloumi50g
  • wholemeal bun1
  • lettuce and tomato1 handful
  • light mayo1 tbsp

Method

  1. Butterfly the chicken breast by slicing it horizontally almost in half and opening it out, then bash it to an even thickness. It cooks in half the time and stays juicy.
  2. Season and griddle over a medium-high heat for 5-6 minutes each side, until the juices run clear and there is no pink at the thickest point.
  3. Dry-fry the halloumi for 2 minutes each side until golden. No oil needed.
  4. Toast the cut sides of the bun in the same pan for 30 seconds.
  5. Build: mayo, lettuce, chicken, halloumi, tomato. Serve straight away while the halloumi is still soft.
Meal-prep note

Cook the chicken ahead if you like, but the halloumi has to be fresh — it sets firm within minutes of leaving the pan.
