Ingredients
- chicken breast150g, cooked and sliced
- romaine lettucehandful
- parmesan20g, shaved
- light caesar dressing2 tbsp
- tortilla wrap1 large
Method
- If your chicken isn't already cooked: season a 150g chicken breast with salt and pepper and pan-fry over medium heat for 6-7 minutes per side until the internal temperature reaches 74°C (or the juices run clear when pierced). Rest for 3 minutes, then slice.
- Roughly chop the romaine lettuce and add to a bowl with the sliced chicken and shaved parmesan.
- Add the caesar dressing and toss until everything is lightly coated.
- Warm the tortilla in a dry pan for 20-30 seconds per side so it's flexible.
- Pile the filling down the centre of the wrap, fold in the short ends, and roll tightly.
- Slice in half diagonally and serve, or wrap in foil to take with you.
Meal-prep noteBest assembled fresh so the wrap doesn't go soggy, but the chicken can be cooked and sliced up to 3 days ahead.
