Ingredients

  • chicken breast150g, cooked and sliced
  • romaine lettucehandful
  • parmesan20g, shaved
  • light caesar dressing2 tbsp
  • tortilla wrap1 large

Method

  1. If your chicken isn't already cooked: season a 150g chicken breast with salt and pepper and pan-fry over medium heat for 6-7 minutes per side until the internal temperature reaches 74°C (or the juices run clear when pierced). Rest for 3 minutes, then slice.
  2. Roughly chop the romaine lettuce and add to a bowl with the sliced chicken and shaved parmesan.
  3. Add the caesar dressing and toss until everything is lightly coated.
  4. Warm the tortilla in a dry pan for 20-30 seconds per side so it's flexible.
  5. Pile the filling down the centre of the wrap, fold in the short ends, and roll tightly.
  6. Slice in half diagonally and serve, or wrap in foil to take with you.
Meal-prep note

Best assembled fresh so the wrap doesn't go soggy, but the chicken can be cooked and sliced up to 3 days ahead.
