Ingredients

  • chicken breast200g
  • panko breadcrumbs60g
  • curry sauce mix1 packet or homemade
  • rice75g, uncooked
  • carrot1, sliced

Method

  1. Coat the chicken breast in flour, egg and panko, then shallow-fry until golden and cooked through.
  2. Simmer the carrot in the curry sauce until soft, about 10-12 minutes.
  3. Cook the rice according to packet instructions.
  4. Slice the chicken and serve over rice with the curry sauce poured over.
Meal-prep note

The panko coating goes soft if stored assembled — prep the sauce and rice ahead, but fry the chicken fresh, or re-crisp it in the oven.
