Cod & Sweet Potato Traybake

Ingredients
- cod fillet180g
- sweet potato1, cubed
- broccoli100g
- garlic2 cloves
- olive oil1 tbsp
Method
- Preheat the oven to 200°C (180°C fan). Cube the sweet potato into 2cm chunks.
- Toss the sweet potato with half the olive oil, salt and pepper on a large baking tray, spread in a single layer, and roast for 20 minutes.
- Add the broccoli florets and whole garlic cloves to the tray, toss with the remaining oil, and roast for a further 10 minutes.
- Push the vegetables to the sides, place the cod fillet in the centre, season it, and return the tray to the oven for 10-12 minutes. The cod is done when it turns opaque and flakes easily with a fork — don't overcook it or it turns rubbery.
- Squeeze the softened roasted garlic out of its skins over the fish, add a squeeze of lemon if you have one, and serve straight from the tray.
Meal-prep noteBest roasted fresh so the fish doesn't overcook on reheating, but the sweet potato and broccoli can be chopped up to 2 days ahead.
