Ingredients

  • cottage cheese150g
  • eggs2
  • oats40g, blended to flour

Method

  1. Add the cottage cheese, eggs, oats and banana to a blender. Blend for 30-45 seconds until mostly smooth — a little texture from the oats is fine.
  2. Let the batter rest for 5 minutes; it will thicken slightly as the oats absorb moisture.
  3. Heat a non-stick pan over medium heat and add a small amount of oil or butter, wiping out any excess with kitchen paper.
  4. Pour small rounds of batter (about 3 tablespoons each) into the pan — don't overcrowd, cook 2-3 at a time.
  5. Cook for about 2 minutes until bubbles appear on the surface and the underside is golden, then flip carefully and cook another 1-2 minutes. The pancakes are done when they spring back lightly when pressed.
  6. Keep warm under foil while you cook the rest. Serve warm with fruit.
