Ingredients

  • lean beef mince150g
  • potato300g
  • carrot1, diced
  • onion1, diced
  • beef stock150ml

Method

  1. Boil the potato in salted water for 18-20 minutes until a knife slides in with no resistance, then drain and steam dry for 2 minutes before mashing.
  2. Brown the mince in a dry pan over a high heat for 5 minutes without stirring much — you want colour, which is where the flavour comes from.
  3. Add the onion and carrot and cook for 8 minutes until softened, then pour in the stock and simmer for 15 minutes until thickened.
  4. Season the mash generously and spread it over the mince in an ovenproof dish, roughing the top with a fork so it catches.
  5. Bake at 200C / 180C fan for 20-25 minutes until the top is golden and the edges are bubbling.
Meal-prep note

Assemble a day ahead and bake straight from the fridge with an extra 10 minutes. Freezes for 3 months, cooked or uncooked.
