Ingredients
- lean beef mince150g
- potato300g
- carrot1, diced
- onion1, diced
- beef stock150ml
Method
- Boil the potato in salted water for 18-20 minutes until a knife slides in with no resistance, then drain and steam dry for 2 minutes before mashing.
- Brown the mince in a dry pan over a high heat for 5 minutes without stirring much — you want colour, which is where the flavour comes from.
- Add the onion and carrot and cook for 8 minutes until softened, then pour in the stock and simmer for 15 minutes until thickened.
- Season the mash generously and spread it over the mince in an ovenproof dish, roughing the top with a fork so it catches.
- Bake at 200C / 180C fan for 20-25 minutes until the top is golden and the edges are bubbling.
