Ingredients

  • salmon fillet250g
  • basmati rice150g, uncooked
  • avocado1
  • olive oil2 tbsp
  • lemon0.5

Method

  1. Cook the rice according to packet instructions.
  2. Preheat the oven to 200°C (180°C fan). Place the salmon on a lined baking tray, rub with half the olive oil, and season with salt and pepper.
  3. Bake the salmon for 12-14 minutes, until it flakes easily at the thickest part.
  4. Halve, stone and slice the avocado.
  5. Plate the rice, place the salmon on top, arrange the avocado alongside, and finish with the remaining olive oil, a squeeze of lemon, and a pinch of salt.
  6. At roughly 1500 kcal this is a serious bulking meal — the portion scaler will trim it to your target if needed.
Meal-prep note

Best with freshly cooked salmon. The rice can be batch-cooked ahead — reheat with a splash of water.
