Ingredients

  • potato1 large baking potato
  • baked beans200g
  • cheddar cheese40g, grated

Method

  1. Preheat the oven to 200°C (180°C fan). Wash the potato, dry it, and prick it all over with a fork — this stops it bursting.
  2. Rub the skin with a little oil and salt for a crispier finish, then bake directly on the oven shelf for 60-75 minutes, until a knife slides into the centre with no resistance. (Short on time? Microwave on high for 8-10 minutes, then crisp in the oven for 10 minutes at 220°C.)
  3. About 5 minutes before the potato is done, warm the baked beans in a small pan over medium heat, stirring occasionally.
  4. Cut a deep cross into the top of the potato and squeeze the sides to open it up. Fluff the inside with a fork and season with salt and pepper.
  5. Spoon the hot beans over the potato and top with the grated cheddar so it melts into the beans. Serve immediately.
