Ingredients
- lamb leg180g, cubed
- Greek yogurt60g
- lemon0.5
- cherry tomatoes100g
- cucumber80g
Method
- Cube the lamb into even 3cm pieces and toss with the juice of half the lemon, salt and pepper. Marinate for at least 30 minutes, or overnight.
- Thread onto skewers, leaving small gaps so the heat reaches all sides.
- Grill or griddle over a high heat for 8-10 minutes, turning every 2 minutes, until charred outside and just pink in the middle.
- Rest the skewers for 5 minutes — lamb carries on cooking and the juices redistribute.
- Serve with the yogurt, tomatoes and cucumber alongside.
