Ingredients

  • lamb leg180g, cubed
  • Greek yogurt60g
  • lemon0.5
  • cherry tomatoes100g
  • cucumber80g

Method

  1. Cube the lamb into even 3cm pieces and toss with the juice of half the lemon, salt and pepper. Marinate for at least 30 minutes, or overnight.
  2. Thread onto skewers, leaving small gaps so the heat reaches all sides.
  3. Grill or griddle over a high heat for 8-10 minutes, turning every 2 minutes, until charred outside and just pink in the middle.
  4. Rest the skewers for 5 minutes — lamb carries on cooking and the juices redistribute.
  5. Serve with the yogurt, tomatoes and cucumber alongside.
Meal-prep note

Marinate and skewer the day before. The lamb is better for the longer marinade, and it goes from fridge to plate in ten minutes.
