Ingredients

  • lamb mince150g
  • wholemeal pitta1
  • Greek yogurt40g
  • red onion0.5
  • cucumber50g

Method

  1. Grate half the onion into the lamb mince, season heavily, and work it with your hands for a full minute — that stickiness is what stops kofta falling apart.
  2. Shape into two sausages around 2cm thick. Chill for 10 minutes if you have time.
  3. Grill or dry-fry over a medium-high heat for 8-10 minutes, turning every couple of minutes, until well browned and cooked through with no pink in the middle.
  4. Slice the cucumber and remaining onion. Warm the pitta for 30 seconds and split it open.
  5. Stuff with the kofta and salad, and spoon the yogurt over.
Meal-prep note

The raw mixture keeps for a day and freezes for a month once shaped. Cook from frozen with an extra 4 minutes.
