Lamb Kofta Pitta

- Greek yogurt40g

Method
- Grate half the onion into the lamb mince, season heavily, and work it with your hands for a full minute — that stickiness is what stops kofta falling apart.
- Shape into two sausages around 2cm thick. Chill for 10 minutes if you have time.
- Grill or dry-fry over a medium-high heat for 8-10 minutes, turning every couple of minutes, until well browned and cooked through with no pink in the middle.
- Slice the cucumber and remaining onion. Warm the pitta for 30 seconds and split it open.
- Stuff with the kofta and salad, and spoon the yogurt over.
Meal-prep noteThe raw mixture keeps for a day and freezes for a month once shaped. Cook from frozen with an extra 4 minutes.
