Ingredients

  • chicken breast250g
  • large tortilla wraps2
  • avocado1
  • cheddar cheese50g
  • Greek yogurt2 tbsp

Method

  1. Season the chicken breast and pan-fry over medium heat for 6-7 minutes per side until cooked through (74°C internal, juices run clear). Rest 3 minutes, then slice into strips.
  2. Warm both tortillas in a dry pan for 20-30 seconds per side so they're flexible.
  3. Halve, stone and slice the avocado.
  4. Divide the chicken, avocado, grated cheddar and Greek yogurt between the two wraps, keeping the filling in a line down the centre with space at the ends.
  5. Fold in the ends and roll each wrap tightly. For a toasted finish, return each wrap seam-side down to the hot pan for 1 minute.
  6. Around 1330 kcal for both wraps — eat one now and save the second (they keep a day wrapped in foil), or have both if you're deep in a bulk.
Meal-prep note

Cook the chicken in bulk ahead — just slice and assemble fresh each day. Avocado is best added fresh.
