Ingredients

  • chicken breast100g, cubed
  • smoked paprika1 tsp
  • olive oil1 tsp
  • lemon0.25

Method

  1. Cube the chicken into even 2.5cm pieces so they finish cooking at the same time.
  2. Toss with the oil, smoked paprika and a good pinch of salt until evenly coated.
  3. Thread onto two skewers, leaving small gaps between the pieces.
  4. Grill or griddle over a medium-high heat for 10-12 minutes, turning every 3 minutes, until charred outside and white the whole way through.
  5. Squeeze the lemon over while still hot.
Meal-prep note

Cook a batch and keep them in the fridge for 3 days. Good cold straight from the tub, which is what makes them a snack rather than a meal.
