Ingredients

  • beef mince180g
  • spaghetti80g, uncooked
  • tomato passata300ml
  • onion0.5, diced
  • garlic2 cloves

Method

  1. Heat a tablespoon of oil in a large pan over medium heat. Add the diced onion and cook for 4-5 minutes until soft and translucent, then add the minced garlic for the final minute.
  2. Turn the heat up, add the beef mince, and break it up with a spoon. Cook for 5-6 minutes until browned all over with no pink remaining.
  3. Pour in the passata, season with salt, pepper and a pinch of sugar (it balances the acidity), and stir well.
  4. Reduce the heat to low and simmer uncovered for at least 20 minutes, stirring occasionally — longer is better if you have time; 45 minutes gives a richer sauce.
  5. About 12 minutes before serving, cook the spaghetti in well-salted boiling water according to packet instructions until al dente.
  6. Drain the spaghetti, plate it, and spoon the sauce over the top. Add parmesan if you have it. The sauce freezes brilliantly — consider doubling it.
