Ingredients

  • sweet potato1, cubed
  • black beans150g
  • tortilla3 small
  • lime1
  • corianderhandful

Method

  1. Preheat the oven to 200°C (180°C fan). Cube the sweet potato into 2cm chunks, toss with a little oil, salt and smoked paprika if you have it, and roast for 25 minutes until tender and caramelised at the edges.
  2. Warm the black beans in a small pan over low heat with a splash of water and a pinch of cumin, mashing a few lightly so they hold together.
  3. Warm the tortillas in a dry pan for 20 seconds per side, or wrapped in foil in the oven for the last 5 minutes.
  4. Fill each tortilla with a layer of beans, then the roasted sweet potato.
  5. Top with fresh coriander and a good squeeze of lime — the acidity lifts the whole thing. Eat immediately.
