Ingredients
- tuna1 tin, drained
- pasta80g, uncooked
- sweetcorn60g
- cherry tomatoes8, halved
- light mayo2 tbsp
Method
- Cook the pasta in well-salted boiling water according to packet instructions (usually 10-12 minutes) until al dente. Drain and rinse under cold water for 30 seconds to stop the cooking and cool it down.
- Drain the tin of tuna well and flake it into a large bowl.
- Add the sweetcorn and halved cherry tomatoes to the bowl.
- Add the cooled pasta and the mayo, and toss until evenly coated. Season with salt, pepper, and a squeeze of lemon if you have one.
- Serve immediately, or refrigerate — it keeps well for up to 4 days and is ideal for packed lunches.
