Ingredients

  • tuna1 tin, drained
  • pasta80g, uncooked
  • sweetcorn60g
  • cherry tomatoes8, halved
  • light mayo2 tbsp

Method

  1. Cook the pasta in well-salted boiling water according to packet instructions (usually 10-12 minutes) until al dente. Drain and rinse under cold water for 30 seconds to stop the cooking and cool it down.
  2. Drain the tin of tuna well and flake it into a large bowl.
  3. Add the sweetcorn and halved cherry tomatoes to the bowl.
  4. Add the cooled pasta and the mayo, and toss until evenly coated. Season with salt, pepper, and a squeeze of lemon if you have one.
  5. Serve immediately, or refrigerate — it keeps well for up to 4 days and is ideal for packed lunches.
