Ingredients

  • turkey mince150g
  • sweet potato150g, diced
  • spinach40g
  • onion0.5, diced
  • egg1

Method

  1. Dice the sweet potato into 1cm cubes — smaller cubes cook faster and more evenly.
  2. Heat a tablespoon of oil in a large frying pan over medium heat. Add the sweet potato and cook for 8-10 minutes, stirring every couple of minutes, until the cubes are fork-tender and browning at the edges. Remove and set aside.
  3. In the same pan, add the turkey mince and diced onion. Break the mince up with a spoon and cook for 5-6 minutes until no pink remains and the onion is soft.
  4. Return the sweet potato to the pan, add the spinach, and stir for 1-2 minutes until the spinach wilts. Season well with salt and pepper.
  5. In a separate small pan, fry or poach the egg to your liking (for a runny yolk, fry over medium heat for about 3 minutes without flipping).
  6. Plate the hash and top with the egg. The runny yolk acts as a sauce.

The hash keeps and reheats well for 3-4 days; fry or poach the egg fresh each time rather than reheating it.
