Ingredients

  • turkey mince200g
  • pasta80g, uncooked
  • tomato sauce300ml
  • parmesan15g
  • basilhandful

Method

  1. Season the turkey mince generously with salt and pepper, then roll into balls about the size of a golf ball — wet hands stop the mixture sticking. You should get 8-10.
  2. Heat a tablespoon of oil in a large pan over medium heat. Add the meatballs and brown for 2 minutes per side — they don't need to be cooked through yet.
  3. Pour the tomato sauce over the meatballs, bring to a gentle simmer, and cook for 15 minutes, turning the meatballs halfway. They're done when firm to the touch and no pink remains in the centre (cut one open to check).
  4. Meanwhile, cook the pasta in well-salted boiling water according to packet instructions until al dente.
  5. Drain the pasta and serve topped with the meatballs and sauce, finished with parmesan and torn basil.
  6. The meatballs and sauce freeze well — cook the pasta fresh when reheating.
