Ingredients

  • Greek yogurt120g
  • cucumber60g
  • wholemeal pitta1
  • garlic1 clove

Method

  1. Coarsely grate the cucumber, then squeeze it hard in a clean tea towel. This is the step people skip and it is why tzatziki turns watery.
  2. Crush the garlic to a paste with a pinch of salt.
  3. Stir the cucumber and garlic through the yogurt and season. Rest for 10 minutes so the garlic mellows.
  4. Toast the pitta until puffed, then tear or cut into strips for dipping.

The tzatziki keeps for 3 days and improves overnight. Toast the pitta fresh — it goes leathery once cooled.
