Ingredients

  • tofu180g, cubed
  • vegan protein powder0.5 scoop, unflavoured
  • mixed vegetables200g
  • soy sauce2 tbsp
  • brown rice75g, uncooked

Method

  1. Cook the brown rice according to packet instructions — brown rice typically takes 25-30 minutes, so start it first.
  2. Press the tofu between kitchen paper with a weight on top for 10 minutes to remove excess moisture, then cut into 2cm cubes.
  3. Heat a tablespoon of oil in a wok or large pan over medium-high heat. Add the tofu cubes and fry for 6-8 minutes, turning every couple of minutes, until golden and crisp on most sides. Remove and set aside.
  4. Add the mixed vegetables to the hot pan and stir-fry for 3-4 minutes until just tender but still with bite.
  5. Return the tofu to the pan and add the soy sauce, tossing to coat.
  6. Whisk the protein powder into 3 tablespoons of cold water until smooth, pour it in, and stir for 30 seconds — it will thicken into a light glaze. Serve immediately over the rice.

Like most stir-fries, best cooked fresh for texture — the tofu can be pressed and cubed ahead of time.
